Crispy ranch smashed potatoes comin’ right up 👏🏻 smashed potatoes are always a hit in our house & adding a little ranch flavoring to them tonight really kicked them up a notch 💥 potatoes are so easy to make into versatile dishes, I just love the ranch seasoning here! Snag the recipe below and let me know what you think! Boil potatoes for 30 minutes, until soft. Drain and transfer to a sheet pan. Use a heavy drinking glass to smash your potatoes until the skin breaks. Drizzle with olive oil and a sprinkle of salt, black pepper, parsley, dill, garlic and onion powder. Bake at 450°F for 30 minutes, until crispy. I like to add a minute or two on broil right at the end. Sprinkle with chopped scallions! ✨🥔

1/2 c rolled oats, old-fashioned
1/2 c coconut sugar
1/2 tsp salt
1 tbsp baking powder
1 c milk
5 tbsp melted unsalted butter
2 eggs
1 tsp vanilla extract
3 tbsp pumpkin seeds
1/2 c sunflower seeds
2 tbsp hemp seeds
2 tbsp pistachios
1/4 c raisins
2 tbsp cranberries

Potato toasts with avocado and fried eggs 🥔🥑🍳 potatoes are a great way to kick off the morning. They are nutrient-dense vegetables that provide the energy, potassium and vitamin c I need to fuel my day 👊🏻 I love making a big batch of potato toasts to prep for easy breakfasts throughout the week. These are russet potatoes, sliced lengthwise (maybe 1/4-1/2 inch thick), drizzled with olive oil and roasted at 400°F for 30 minutes!
