A big bowl of cozy? Yes please! I put a pot of spa A big bowl of cozy? Yes please! I put a pot of spaghetti up the other night and it was 💯 👏🏻
Herby pistachio & olive spaghetti
• 3 tbsp pistachios
• 1/3 c olive oil
• 4 cloves garlic, minced
• 1 tspn red pepper flakes 
• 2 sprigs fresh oregano
• 2 tsp dried thyme
• 2 tsp dried basil
• 2 tsp dried rosemary
• 1/4 lemon
• A pinch of salt and pepper
• 1/2 c pitted green olives
• 1 box spaghetti
• 2 tbsp white wine (I used chardonnay)
• 2 tbsp fresh grated parmesan
• 1/2 c grape tomatoes, halved
Pre-heat oven to 350°F 
In a small pan, toss pistachios in a bit of olive oil and salt. Roast for 5 minutes.
Meanwhile, begin to boil your spaghetti in a medium sized pot.
In a large pan over medium high heat, add olive oil, garlic, olives, lemon and herbs.
When spaghetti is tender, drain and let cool under cold water. The cold water will help avoid clumping!
Add drained spaghetti, pistachios and white wine to large pan of olive oil and spices. Let simmer for 5 minutes to thicken. 
Serve with fresh tomatoes and a sprinkle of parmesan!

Crispy ranch smashed potatoes comin’ right up 👏🏻 smashed potatoes are always a hit in our house & adding a little ranch flavoring to them tonight really kicked them up a notch 💥 potatoes are so easy to make into versatile dishes, I just love the ranch seasoning here! Snag the recipe below and let me know what you think! Boil potatoes for 30 minutes, until soft. Drain and transfer to a sheet pan. Use a heavy drinking glass to smash your potatoes until the skin breaks. Drizzle with olive oil and a sprinkle of salt, black pepper, parsley, dill, garlic and onion powder. Bake at 450°F for 30 minutes, until crispy. I like to add a minute or two on broil right at the end. Sprinkle with chopped scallions! ✨🥔

3/4 c whole wheat flour
1/2 c rolled oats, old-fashioned
1/2 c coconut sugar
1/2 tsp salt
1 tbsp baking powder
1 c milk
5 tbsp melted unsalted butter
2 eggs
1 tsp vanilla extract
3 tbsp pumpkin seeds
1/2 c sunflower seeds
2 tbsp hemp seeds
2 tbsp pistachios

2 tbsp cranberries
