EASY ITALIAN WEDDING SOUP

I’ve never made Italian Wedding soup before. I’ve also never been to a traditional Italian wedding before. Now all I wonder is if they eat this soup though!

So I had to research it of course. The internet says no! Italian wedding soup is not in fact served at Italian weddings, but it’s named for the marriage of flavors in the soup. Tasty enough for me!

It’s been the perfect addition to our fridge this week as the temperature drops and I crank the heat up. I love having soup on-hand in my fridge or freezer for easy heating and enjoying! Especially since our new home’s heater can be a little tricky. We went a few days thinking it didn’t work at all! We’ve since learned that it needs to disconnect from the wi-fi to work properly, since the previous owner still controls it via the wi-fi enabled app. Lovely. Nonetheless, the heat does work.

My favorite soups are always super chunky. I love lots of veggies in every bite. It makes for such a warm and comforting experience for my meal. Plus, it just feels like more of a meal to me when there’s chunks and chewing involved, rather than just straight slurping. Does that make any sense? I hope so!

Anywho… traditionally, Italian wedding soup is made with mini meatballs. I substituted True Story Foods Organic Sweet Italian Chicken Sausage for an easy and convenient option packed with flavor!

Using their sausages skips a huge time consuming and messy step in the traditional recipe you’d usually find. Plus I’m not too great at cooking meat in general. It always ends up raw and then I have to re-cook it. So let’s keep things simple, shall we? True Story Foods to the rescue.

Another tid bit you may notice about my cooking is that I almost never peel anything. I find it bothersome, time consuming and unnecessary! Peels are usually packed with nutriton and don’t bother me when eating.

In college, I remember a good friend told me she peeled her celery! I had never heard of that concept before! Either way, feel free to peel your carrots and celery if it lights you up. If not, not!

I also used beef soup broth in this recipe because it was what I had on-hand. Feel free to use vegetable or chicken broth if you’d like! Use vegetable broth and nix the chicken sausage for a vegetarian option.

Orzo is the perfect addition for a filling and delicious grain to your soup. They do sell whole grain orzo if you keep your eyes peeled. Any small pasta will do the trick though!

Anywho, back to this quick and easy soup, shall we?

EASY ITALIAN WEDDING SOUP

Prep time: 30 minutes

Serves: 6

1 tbsp olive oil

3 large celery stalks, chopped

2 medium carrots, sliced into rounds

1/2 large red onion, diced

2 cloves garlic, minced

3 stems dino kale, shredded

1/4 tsp pink Himalayan salt

6 c soup broth

1 (28 oz) can diced tomatoes

1 package True Story Foods Organic Sweet Italian Chicken Sausage, chopped into 1/2 inch rounds

8 oz orzo

  1. Heat olive oil in large stockpot over medium heat. Stir in celery, carrots, red onion, garlic and salt until fragrant, about 3-5 minutes.
  2. Pour in broth and diced tomatoes, bring pot to a boil.
  3. Add chicken sausage and kale. Cook for 10 minutes, allowing greens to wilt and sausage to heat.
  4. Bring the soup to a simmer and slowly add orzo. Cook for 10 minutes, stirring to keep the orzo from sticking.

Serve immediately or freeze for up to three months.
