These chocolate covered almonds are the perfect combination of crunchy, sweet and salty! I’m always looking for new snacks to munch on and these have hit the spot. They’re not your typical chocolate covered almond though, they’re packin’ some extra protein. Did you know you can mix in a bit of protein powder when melting chocolate? This little life hack to sneak more protein into your snacks can be used on any chocolate drizzle- almonds, bananas, strawberries, cookies, etc.
CHOCOLATE COVERED PROTEIN ALMONDS
Prep time: 25 minutes
1/2 c chocolate chips
1 tbsp chocolate protein powder
1 tsp coconut oil
1/2 c almonds
a dash of pink Himalayan salt
Melt chocolate chips in a double boiler or use the microwave (40 seconds did the trick!). Stir in chocolate protein powder and coconut oil. Microwaved for another 10 seconds if your coconut oil is solid, to assure the consistency is liquidy enough for dipping and drizzling. Pour almonds into the chocolate & stir to coat. Remove almonds individually with a fork, letting excess chocolate drip off into the bowl. Place almonds on a wax paper covered baking sheet. Sprinkle with a dash of pink Himalayan salt and freeze for 15 minutes!
