Guac like there’s no tomorrow! Guacamole is always a solid choice, but today I’m mixing it up with some fresh herbs and roasted veggies you wouldn’t quite expect. This funky little basil guac remix will guacamole your world!
BASIL GUACAMOLE WITH ROASTED TOMATOES
Prep time: 10 minutes
2 c roasted grape tomatoes
1 lemon, juiced
2 cloves garlic, minced
1/2 tsp olive oil
1/4 c red onion, chopped
1/2 c fresh basil, chopped
a hearty sprinkle of salt and peppers
Mash your avocado and gently combine all other ingredients to indulge. My favorite guacamole hack? If you’re looking to keep your guacamole from browning, fill your bowl with 1/2 inch of water above your guacamole, cover and refrigerate. When you’re ready to re-open your guacamole, carefully pour the water off the top and give your guac a good mix to enjoy!
