GREEN BEAN QUINOA SALAD

Summer time and the livin’ is easy. Did you know green beans are seasonal for summer? My fridge has been stocked with them and I was dying to mix them up in a fun new recipe aside from the usual steam and serve.

GREEN BEAN QUINOA SALAD

Prep time: 10 minutes

Serves: 3
1 c green beans, steamed
1/2 c cooked quinoa
1/4 onion, roughly chopped
1/4 c fresh parmesan cheese
1/4 c basil, roughly chopped
1/4 lemon, juiced
3 tbsp olive oil
A dash of pink Himalayan salt & black pepper

Toss and enjoy.
